A new bar and grill in Sussex, The GOAT, is looking to open its doors by June 1

A soon-to-be open bar and grill in Sussex takes its name from the "Greatest of All Time" moniker and even features a goat dish on its menu.

The GOAT Bar & Grill, a restaurant with elevated bar food, is anticipating opening before June 1. But owner Katie Johnson-Rizer wants to make sure The GOAT is "completely ready and staffed" first.

"The menu is going to be a changing menu," said Johnson-Rizer, saying she will keep dishes that are working very well and changing dishes that are not.

Johnson-Rizer is also the new owner of Big Boy Burgers & Sweets which opened in December and has more than 20 years of restaurant experience in the Lake Country area, including being a former executive chef at Delafield Brewhaus and banquet chef at The Delafield Hotel.

Johnson-Rizer said The GOAT will have a "trendy" vibe with gluten free, vegetarian and vegan options, and will serve featured dishes weekly.

"Everything is house made, down to the mayonnaise," she said.

The GOAT is at N63 W23675 Main St., Sussex. It is next Big Boy Burgers & Sweets.

What are some of The GOAT's menu items?

Johnson-Rizer said The GOAT's menu is inspired by her mother, Janet Johnson, and how she cooked for her as a child. "I took a lot of her recipes and just elevated it over the years," she said.

Some of her mother's recipes which are on the menu include the flat iron steak with zucchini casserole, the classic wedge salad and the pickle pizza flatbread featuring house made pickles.

Other menu items include funnel fries, Basque cheesecake (bacon bourbon caramel with house whipped cream) avocado BLT, stuffed mushroom with goat cheese, artichoke dip, roasted red peppers zucchini, Calabrian chili oil and cilantro oil). A braised goat tostone is on the menu, too.

Will there be a beer garden?

Yes, there will be a beer garden, featuring 16 craft beers. The beer garden is off the Bugline Trail. Johnson-Rizer said she plans on having a beer garden bingo to benefit charity.

Is The GOAT hiring?

The GOAT is hiring all positions, including servers, bartenders, cooks and runners. Johnson-Rizer said they are hiring full and part time positions. Johnson-Rizer said people 15 and older can apply

What will be The GOAT's hours?

Johnson-Rizer said the hours are slated to be 11 a.m. to 8 p.m. every day but closed on Mondays. She said the hours may change.
